Homemade Mint Chocolate Chip Ice Cream Without Ice Cream Maker. Mint is one of my favourite summer herbs to grow because it adds so much flavour to so many recipes. Mint adds a quick burst of summer flavour to almost any dish, from lemonades to salads.
So when an ice cream maker was given to me as a gift, I knew exactly which flavour I wanted to try first. Mint grows like a weed in the garden, so there’s plenty of it.
2 cups of fresh mint leaves are required for this recipe. This recipe takes two days to complete, so it is not quick but simple. Many ice cream recipes call for egg yolks or xantham gum, but this one does not, and it is still incredibly creamy.
Mint Choc Chip Ice Cream! You don’t have to use an ice cream maker to make this insanely delicious and creamy ice cream. Shall we get started?
- Here’s what you’ll need to make approximately 1 litre.
- Double Cream 470ml
- 1 397g Condensed Milk Tin
- 1 teaspoon vanilla extract 1 teaspoon peppermint extract 1 teaspoon green food colouring
- Milk Chocolate Chips 200g
Step 1: Preparing the Ice Cream
To begin, whisk the cream in a large mixing bowl with a hand whisk or an electric stand mixer fitted with a whisk attachment until stiff peaks form. Take care not to over-whisk because it may become grainy If it does, try adding a little milk and mixing it in with a spatula to restore it.
