When I drink jasmine milk tea or any other bubble tea, chewy and sweet boba is such a treat. After years of buying premade boba, I finally have a recipe for making boba pearls with cornstarch at home whenever I get a craving. You can make boba with just three ingredient. dark brown sugar, water, and tapioca starch.
Why make your own boba?
While I’ve visited many boba cafes over the last 20 years, I’ve discovered that homemade boba from scratch is extremely rare at these establishments. Recently, OneZo (stores in California, New York, and Massachusetts) made headlines for making boba in-store, and I began researching how to make boba at home because I wanted to know exactly what I was doing.
After actually buying approximately 13 different varieties of premade boba from various shops and retail boba shops, I realised that many of these boba pearls were made with a variety of ingredients that I did not recognise. While researching how to make boba from scratch, I discovered that the majority of boba is made with only three ingredients: tapioca starch, dark brown sugar, and water.

Making boba at home can be difficult, so I wanted to give you another option–buying premade pearls. You can buy various brands of premade boba online and in stores if you want to make boba milk tea.
Please be advised, however, that many people appear to have difficulty cooking premade boba even when they arrive.
with guidelines I purchased 13 different varieties to assist people in troubleshooting these cooking issues, and the methods of cooking can vary greatly from brand to brand, and type within a brand, but in the end, if you’re willing to experiment and retry, it’s much easier than making your own boba.

Why is it difficult to make your own boba?
When I first tried this, I honestly thought it would be a simple process; however, this mindset quickly vanished after my second attempt at making pearls. It’s important to note that this can be a difficult process because working with tapioca starch is a difficult situation.
I struggled with timing and texture issues with my dough while working on this recipe. My dough went from being too sticky and wet to too dry. I finally found a recipe after several rounds of testing.

Tapioca Pearls How to Make Them (step by step)
Step 1. Combine the dark brown sugar and water in a saucepan over medium heat. Stir the liquid until it warms up and the sugar dissolves. This takes approximately 45 seconds.
Step 2. Remove the pan from the heat and add two tablespoons, constantly mixing to ensure even distribution. This should take less than five seconds.
Step 3. In your pan, thoroughly mix in the remaining tapioca starch. Make certain that all of the tapioca starch has been incorporated into the thick mixture. It can be exhausting to stir so much, but it’s well worth it. This should result in a dough that is thick and sticky. It should only take about a minute.
Step 4. Dust your cutting board or pastry board with tapioca starch. Place the dough on the surface and sprinkle with a little more tapioca starch.
Step 5. Gently knead your dough, adding more tapioca starch if it’s still too sticky. I like to knead the dough for about two minutes. Pull your dough apart to see if it snaps or breaks in the middle; if it does, it’s ready. It should be smooth as well.
Step 6. Divide your dough into quarters and wrap three sections in cling wrap to keep it from drying out. Make a cylinder out of one quarter.

Step 7. Cut the log into 14-quarter-inch pieces. Roll one piece between your palms to form a small ball. (Keep in mind that the boba will expand in the boiling water as it cooks.)
Step 8. Sift some tapioca starch into a tray or bowl and place your boba balls in it to keep them from sticking together. Repeat with the remaining dough.
Step 7. Once you’ve finished rolling all of your balls, strain them to remove any excess starch.
Step 8. Bring about 10 cups of water to a boil in a large pot, then add about 12 cup of boba. Wait for the boba to float before cooking.
Cook for about 20 minutes, uncovered, on medium heat. Nota bene: after immersing my boba in boiling water, I noticed they changed shape, resembling raisins. However, after 20 minutes of boiling, they rounded out again.
Step 9. Remove the pot from the heat, cover with a lid, and set aside for another 20 minutes.
Step 10. Remove the boba from the water and rinse it under cold water to remove the excess starchy layer, then stop the cooking process and use the pearls as soon as possible.
Step 11. (optional) If you want to sweeten the boba even more, combine it with two tablespoons of dark brown sugar (or honey) in a bowl and leave it to marinate for ten minutes.
With jasmine milk tea or Thai tea, pair your boba. Again, try to serve and consume these pearls as soon as possible.
Tips for achieving better results
Tapioca starch/flour is required. These are the same thing, but cornstarch cannot be substituted for tapioca starch. The boba will not properly form. How to make boba pearls with cornstarch.
Heat it up
When heating your water and dark brown sugar, make sure the liquid is hot enough to dissolve the tapioca starch.
When you return the sugar water and starch mixture to the stove, you must move quickly! Stir the liquid constantly, and when you see it thickening at the bottom of the pan, remove it before it becomes too sticky.
Knead your cash! I saw some videos of people posting their boba fails because they thought their dough was too dry, but it was only because they didn’t knead it enough to incorporate the ingredients.
But don’t overknead! The dough should be warm to the touch while kneading. Stop kneading before the dough becomes too cold and dry. Dough that is too dry will crack. If you quickly pull your dough apart, it should snap in the middle. This is the time to stop kneading and begin shaping your round balls.
Before rolling out the dough into balls, wrap it all in plastic wrap to keep it from drying out.
Cover the finished balls with more tapioca starch to keep them from sticking together.
Drying the boba will give it a more round shape. While you can cook your boba right away, I discovered that drying them out for about two hours helps them retain their super round shape.

Is it possible to make tapioca pearls out of cornstarch?
It is critical to use tapioca starch when making boba or tapioca pearls because the sticky and chewy nature of tapioca starch is required in your dough. Cornstarch does not have the same properties as flour to provide the same texture.
