So you requested to tell the next time you made your caribbean lentil rice recipe with a little bit of pigtail in there. The caribbean rice and lentils recipe is very delicious.
It’s very basic very straight forward but you promised. You would do it so we are having it for dinner tonight.
you are going to do a very quick tutorial and tell you how it’s done okay. so here’s a basic overview of the ingredients oh the key ingredient being. The rice big deal so the first thing you’re going to want to do is put on a medium-sized pot of water.
you can kind of see the size of my pot there and you want to fill the water three quarters of the way full that’s. Going to be more water than you need to make the rice of itself but remember.
you’re going to boil the lentils with the pigtail. And the seasonings for a little while and that’s going to reduce the amount of water in your pot so start with at least three quarters of.The Caribbean Rice and Lentils Recipe is a tasty recipe.
your pot full of water and if you need to add more for the rice later you can do that you’re going to put the stove. All the way up to a medium high heat and nothing in the water the pigtail is very very salty. because it is a salted pigtail.
so you don’t really need to anything to the water at this point you’ll just leave the lid on it. All right so we are going to be using half of a cup of green lentils here’s the bag that.
What brand is this cedar any brand is perfectly fine you are using green lentils. We traditionally use a green lentil for our lentil rice.
you know Caribbean Rice and Lentils Recipe lentils comes in orange and yellow and lots of different colors you also know that depending. on the color the lentils take a different amount of time to cook.
so you can’t say for sure that this is going to work with a different lentil. you can try it but for this recipe green lentils and these ones are fairly large.
YUou’ve seen some that are quite a bit smaller than this but if that gives you an idea. You’re going to add this to our water with some seasoning some just dried thyme leaves.
You are gonna put in a bay leaf some powdered garlic again about a quarter teaspoon. You mean not a quarter teaspoon. what did you say? one teaspoon okay of each of those you really want this rice to have a lot of flavor.
And this is going to soak up quite a bit of the flavor as well so that’s why you’re going with a full teaspoon. Basically whatever dried ingredients like dry seasonings you like add those in now this is the pigtail.
you’ve already washed off two pieces when put in like a little ziploc bag and throw it in the freezer. It is literally the tail of a pig now you sure. Some people are going to be completely grossed out by that you don’t know why if you eat pork and if you eat bacon.
It’s basically the same situation you can see a little joint in. It still has a bit of the rind on it which is perfect because that’s going to add a lot of bacony flavor to your rice. Let’s start adding some things to the pot.
So in go two pieces of pigtail for the amount of rice that. You are going to add in goes half a cup of brown lentils. Next go to add my thyme leaves and again let me get that about a teaspoon of that garlic powder.
One teaspoon of that bay leaf nope that one looks gross you got issues ladies that’s a pretty one and it goes. I forgot to tell you but you also add in a little bit of this jerk seasoning.
Really really good ingredients in this. If you were to take a look so you basically add just the tiniest little bit of this. Then you are just going to stir that all together that’s it so there’s basically the seasonings and it’s in just plain old water.
If you wanted to add even more flavor you could have made the water chicken broth instead. You could have added in additionally a package of onion soup mix but yeah not necessary.
so turn on heat probably like between medium and medium high for about 10 minutes. Until lentils are softened quite a bit and the meat is tender.
then you add the rice cook the rice exactly like you usually would cook it. It’s done you’ll come back and show you the next step how all my seasonings have gone up at the top of the pot along the edge there.
yeah that’s not good so you are just going to take time and scrape all that down. Make sure that’s in there and really soaking into your lentils.
And your pork you think you are going to probably reduce your heat. Just a little bit down to about a six this already smells incredible you would not believe.
That is basically just water and seasonings. It’s because of the pigtail you don’t know what in the world makes a pigtail. So different than any other part of the pig but i am telling you.
If you can find it best rice ever okay that is the way the boil was supposed to look just a rolling boil. It was just a little bit too excited before.
It’s been going for about five minutes. You’ll check in five minutes and see how it is and decide now looks kind of an orangey brown color. Yeah you added and didn’t basically ketchup.
you put in one tablespoon of ketchup just to add a little more sweetness to your rice. You don’t know you just like ketchup. ketchup makes everything better. If you had some soya sauce you’d put a little bit of soy sauce in there as well.
Basically you’re just seasoning this water any way that you like whatever seasonings that you like with the pigtail. The lentils that’s basically all you are doing here.
Alright ladies so it has officially been about 10 minutes 12 minutes to be exact. And this is basically ready for the rice so what the lentils look like.
you’ll drain off some of the water so do you see how they’ve kind of opened up a little bit. They’re sort of peeling off their outer shell a little bit the skins kind of coming off of them.
If you leave them anymore they’re going to completely break apart. you won’t even recognize them in rice. The meat’s basically cooked you’ve boiled it in.
you know essentially you’ve boiled it and it’s still going to cook a little bit more. Because it’s going to take some time for the rice to cook as well but basically that’s what it looks like.
so let’s add our one cup of rice to that so there’s a lot of liquid in there. You are going to add a bit more rice see where the rice stops. Just below the surface of the water that’s enough rice in there.
This is about two cups of rice you are going to actually turn it down to medium heat. You are going to leave that lid off and just let it do its thing. This should take at least six to eight minutes we like our rice aldante so just with a little bit of chew.
In a minute and you are done if you look at that you can see almost all of water is gone. There’s still just a little bit left in there it’s just bubbling away but rice is all dante.
So you are just going to take the lid off. Because if you add the steam the rice cooks a little bit faster and at six minutes it was still pretty hard.
so you put the lid on the rice and cooked it. For an additional about four minutes and just taste the rice. You’ll know when it gets to the you know consistency enjoy the Caribbean Rice and Lentils Recipe.
This is perfect for us like said, there’s still just a little bit too much chew in that for me just a tiny little bit.
so that’s why you are just gonna leave that little bit of water in there. But by taking off the lid now the water will evaporate quicker. You can see like just while you’ve been filming it like most of that bubbling water is gone. See it’s even starting to catch just a tiny little bit on the bottom so lentils reice is ready.
